Tonic & Remedy opens in the M by Montcalm Hotel

21st April sees the opening of Tonic & Remedy in the M by Montcalm Hotel in Shoreditch. Located in the heart of London’s Tech City, the hotel boasts Bridget Riley inspired architecture that stands out amidst Silicon roundabout with its spectacular design. Tonic & Remedy’s unique selling point is the concept focused on apothecary of Shoreditch, integrating a combination of herbs, wine and spices. It is a restaurant and bar that celebrates apothecaries within British heritage and – since the Shoreditch parish was widely known in the 18th & 19th century as one the main areas in London for surgeries, doctors, medicine making and apothecaries – it seems like an appropriate fit.
The menu on offer is the perfect mixture of classic ideas with an experimental twist, all thought up by Great British Menu chef, Paul Welburn (formerly at Michelin-starred kitchen Rhodes W1 and a chef that has retained his Michelin star as well as three AA rosettes). Originally born in Yorkshire, he is a chef recognised for his passion and love of regional cuisine, as demonstrated through his stint on Great British Menu where he represented the North East and earned a perfect ten for his dish.
Dishes that he will be creating range from smoked eels, jelly and seaweed scones to wild garlic risotto and rump of lamb shoulder. There is a menu for all tastes whether it be small plates or something from the a La carte menu. Also helping him create this dishes will be former “The Gherkin” pastry chef, John Grantham.
Managing and creating fascinating cocktail combinations at the bar will be French born Jeremy Pascal. His career so far demonstrates his passion and knowledge of liqueur, winning over 6 competitions around the UK as well as representing established French brand Benedictine. His fascination with herbal liquor is indicated through his thoroughly creative drinks menu which emphasise flavours and aromas.
Sample drinks will include ‘Apothecary’ – a remedy based on famous herbal liqueur cooked with rosemary and sweetened with homemade peach butterscotch jam. ‘Lady Marmalade’ is a slightly sweet and bitter cocktail made by using homemade pink grapefruit marmalade, and ‘Patience and Thyme’ is a fantastic sour infusion of gin and thyme as well as a smoked egg.
Tonic & Remedy will be set inside the striking M by Montcalm Hotel – an awe-inspiring building, designed by RIBA award-winning architects 5+design. Undoubtedly, the building takes inspiration from the ‘Op-Art’ movement pioneered by Bridget Riley, with particular references to ‘Natajara’ (1993), which is now part of the Tate collection. The restaurant itself spans across ground and mezzanine floors, which ensures a relaxed atmosphere for locals and guests to enjoy whilst they are dining and socialising.
It seems Shoreditch’s obsession with all things up-and-coming will never tire and Tonic & Remedy looks set to keep that curiosity for all things weird and wonderful well and truly alive.
